Ingredients
- half serving boa buns
• 180 g all-purpose flour
• • 2.5 g instant yeast (¾ tsp)
• • 16 g sugar
• • 1.5 g salt
• 7 g neutral oil
• 135–140 g warm milk or water
- Taro
• • 1 lb (450 g) taro root, peeled & cubed
• • ⅓ cup sugar
• • 2 tbsp butter or neutral oil
• • 2–4 tbsp milk or coconut milk
• • Pinch salt
Steps

1. Steam taro 20–25 min until fork tender.
2. Mash smooth.
3. Cook in pan with butter, sugar, salt, and milk until thick.
4. Cool completely.

6. Combine dry ingredients.
7. Add warm liquid + oil.
8. Knead 8–10 minutes until smooth.
9. Let rise 35–50 minutes.
10. Only to about 1.5× in size, not doubled.
11. Over-proofing is the #1 altitude issue.
12. Divide into 5–6 pieces (~55–60 g each).
13. Fill with 30–40 g taro paste per bun.
14. Rest 12–18 minutes, just until slightly puffy.
15. Steam 12–14 minutes.
