- half serving boa buns ⢠180 g all-purpose flour ⢠⢠2.5 g instant yeast (¾ tsp) ⢠⢠16 g sugar ⢠⢠1.5 g salt ⢠7 g neutral oil ⢠135ā140 g warm milk or water - Taro ⢠⢠1 lb (450 g) taro root, peeled & cubed ⢠⢠ā cup sugar ⢠⢠2 tbsp butter or neutral oil ⢠⢠2ā4 tbsp milk or coconut milk ⢠⢠Pinch salt
- taro 2. Steam taro 20ā25 min until fork tender. 3. Mash smooth. 4. Cook in pan with butter, sugar, salt, and milk until thick. 5. Cool completely. 6. 2.ā bun 7. Combine dry ingredients. 8. Add warm liquid + oil. 9. Knead 8ā10 minutes until smooth. 10. Let rise 35ā50 minutes. 11. Only to about 1.5Ć in size, not doubled. 12. Over-proofing is the #1 altitude issue. 13. Divide into 5ā6 pieces (~55ā60 g each). 14. Fill with 30ā40 g taro paste per bun. 15. Rest 12ā18 minutes, just until slightly puffy. 16. Steam 12ā14 minutes. 17. ⢠Turn off heat. 18. ⢠Leave lid closed 5 minutes before opening.
