Safflower “Saffron-Style” Rice

Ingredients

• 2 cups basmati rice (sella rice is the authentic rice)
• 2 1/4 cups water
• 1 1/2 tbsp safflower petals
• 2 tbsp butter or neutral oil
• 1 tsp salt
• Optional:
• pinch turmeric (boosts color)
• squeeze of lemon
• tiny pinch sugar

Steps

1. Wash and soak for 20-30 minutes
2. In a small cup, add the safflower petals and 3 tbsp hot water, let steep for 5-10 minutes
3. Add rice, water, safflower liquid + petals, butter/oil, salt, turmeric
