Ingredients
• 2 lbs lamb shoulder, minced (shoulder cut is preferred)
• 300g onion (2 medium, very finely minced or grated + excess water removed)
• 15g salt
• 4g black pepper
• 5g turmeric (1 tsp)
• 8g baking soda (1½ tsp)
- Serve with saffron rice and mast o khair
Steps
1. Mix everything, rest for 4 hours min
2. Form into sausage shape, skewer, and grill
