Ingredients

• 300 g “00” flour or all-purpose flour
• 100 g semolina flour (optional but recommended for texture)
• 4 large eggs
• 1 egg yolk
• 10 g olive oil
• 4 g fine salt
• 5–15 g water, only if needed

Steps

1. Mix the flours and salt on a counter or in a bowl.
2. Make a well in the center.
3. Add eggs, yolk, and olive oil.
4. Slowly incorporate flour into the eggs using a fork.
5. Once shaggy, knead by hand for about 8–10 minutes.
6. Wrap and rest for 30 minutes
7. Roll and cook
