• Spaghetti • Guanciale (or pancetta) • garlic • 2 whole eggs and 2 egg yolks • Pecorino Romano
- Sauce 2. Add eggs, pepper, ton of pecorino cheese graded in, mix really well - Rest 4. Cook pasta, save some water 5. Add meat and garlic to a low heat pan to start rendering 6. Save some pasta water 7. Add noodles to the same pan and some water, move around 8. Warm pasta up on the pan, add more water as needed 9. Little more pasta water, off heat, add sauce, keep it moving to mix in and thicken up over time. If too much pasta water, can put over low heat while consistently moving 10. Done once the sauce looks like it's covered the pasta.
