Roasted Shishito Peppers with Hollandaise

Ingredients
• 1 pound shishito peppers
• 3 large egg yolks
• 2 tbsp lemon juice
• 2 pinches cayenne pepper
• 8 tbsp butter
Steps
1. Place peppers on a sheet pan with olive oil, salt, pepper, roast at 400F for 10-12 minutes
2. Whisk egg yolks, lemon juice, cayenne pepper, and 3/4 tsp salt in a bowl. Slowly pour melted butter, whisking constantly.
3. Microwave for 15 seconds
4. Whisk again
5. Continue microwaving for 10 seconds and whisking until the mixture is thickened and smooth like mayo
