Ingredients
• 500 g bread flour (or all-purpose works too)
• 325 g warm water (about 38–40°C)
• 8 g salt
• 6 g sugar
• 5 g active dry yeast (slightly reduced for altitude)
• 15 g olive oil
Steps
1. Mix water, sugar, yeast and let sit
2. Mix dough
3. Cover and let rise for 45-60 minutes
4. Divide into 8 pieces (105g each), shape into balls, cover and rest for 15-20 minutes
