• 1lb ground pork or pork shoulder or belly (if chopping, add 1 egg yoke and 1 tsp cornflour to mixture) • 3 dried shiitake mushrooms • 3/4 tsp salt • 2.5 tsp sugar • 1 tsp soy sauce • 1.5 tsp Shaoxing wine • 150g/5oz prawns/shrimp • white pepper • msg • 2 tbsp white part of green onions (finely minced) • wonton wrappers • 2 tsp Sesame oil • 1 tbsp Potato starch
1. If chopping, tenderize meat with repeated chops, mix aggressively with the salt 2. Add the rest (or everything but the shrimp and mushrooms at first) final mix 3. Place filling around the wrapper, then push down in the middle with an utensil with a little circle in your fingers. 4. Steam (can also put a little chili oil on top before steaming or carrots)
